Butternet Squash Soup

I've become rather attached to butternut squash recently - it serves as a healthier carbohydrate replacement that I've been having instead of potatoes. I love it roast in the oven, and even had some cold in a salad which was delicious.

This is my first attempt at making butternut squash soup. 
Inspired by some recipes I saw on Pinterest, I chuck some squash in a large pan with a little white onion, garlic, half a sweet potato, a granny smith apple and some vegetable stock. 

After a couple of hours slowly cooking, I blitzed it with a hand blender. No cream or anything added - just delicious and healthy squash goodness!
